Guest Chef Weekend
with Charlie and Marion Cascio

March 26-28

Charlie and Marion Cascio will be our featured chefs for the month of March.

Charlie has cooked throughout Europe, including Germany, France, Belgium, and Spain. He has worked as a personal private chef and has been head chef for numerous restaurants. Charlie has taught natural food cooking seminars to individuals, restaurants, and health professionals throughout Europe and the United States. He continues to cook for large conventions to develop natural health food products and recipes, and to teach courses on cooking, including cooking with raw foods.

Charlie worked as the head chef and kitchen manager for the Esalen Institute, in Big Sur, California from 1998 through 2004 and continues to work for Esalen as a consultant and instructor.

Marion comes from a family of cooks and has been involved with restaurants since childhood. She studied classical culinary arts in Germany for five years and has cooked in many famous restaurants and spas. Marion was a staff cook at Esalen for five years where she learned ethnic cooking techniques and fell in love with cooking from the garden. Cooking for Marion is a creative outlet, a place where she can be an artist of taste and texture.

Charlie and Marion live on the Northern California Coast on a self-sustaining organic farm where they raise vegetables, chickens, goats, and honeybees and make their own cheeses and olive oil.

Notes From the Caretaker:

Dear Friends of Wilbur:

I always hesitate when I want to write something political to you. I imagine you are inundated, if not besieged, with political commentary. In addition, Wilbur is the ultimate place to get away from all that stuff and stress. Furthermore, it is impossible to make a political comment without offending someone and I sure do not want to offend one of my treasured guests.

However, never having been one to keep my mouth shut, here goes ... If I gave a lifelong pension and substantial other benefits to all employees after they had worked at Wilbur for two years I would very quickly be out of business. Can any of you out there give me some reasonable rationalization for our giving this kind of benefit package to our Congress?
